3 firm tomatoes cut into eighths
1 red onion, sliced in to rings (or half-rings if large)
1 cucumber, peeled and sliced
1/2 cup Kalamata olives
1/3 cup Extra Virgin Olive Oil
2 Tbs Red Wine Vinegar
6 oz Feta cheese, cut in to 1/2" cubes
1 tsp dried, crumbled oregano
Fresh ground black pepper and salt to taste
Combine the tomatoes, onion, cucumber, olives, oregano, pepper and salt. Toss well. Put the feta cheese on top of the salad. Just before serving, pour over the olive oil and vinegar and toss again.
This salad is normally served with a good crusty white bread.
