Greek Moussaka (Mousakas)

1 lb of minced meat
1 table spoon of tomato sauce
1 large onion
1 oz of olive oil
2 or 3 large egg plants
5 potatoes
32 oz of milk
4 oz of butter
2 eggs
1 teaspoon of nutmeg
1 teaspoon of salt, 1/2 teaspoon of pepper
4 table spoons of flour

First, make the minced meat:
Place the olive oil into a pot. Chop up the onion into small pieces and place into the pot when the olive oil has heated up. Stir with a wooden spoon approximately 5 minutes until the onion has turned lightly brown. Now place the minced meat into the pot, and add salt and pepper. Mix all the ingredients together. Then place the spoon of tomato sauce and 1 glass of water with the ingredients and mix until the sauce and water are absorbed by the meat. Leave for 1/2 hour to cook.

Second, make the eggplant and potatoes:
Slice the eggplant into long slices and fry them. Then slice the potatoes into slices and fry them as well. In both cases when you remove the eggplant and potato slices from the frying pan you should strain them.

Add the above ingredients together:
Place a layer of potato slices covering the entire baking dish. Cover the layer of potatoes with a layer of eggplant slices. Cover the layer of potatoes with all the minced meat and spread out evenly across the dish. Place a layer of eggplant slices on top of the minced meat covering it. Then place another layer of potatoes covering all the eggplant slices.

Making the cream:
Place the butter into a pot and allow to melt. Place 4 table spoons of flour into the pot and mix. Pour the milk into a different pot and heat up, when warm place into the pot with the butter and flour. Now that all the ingredients are together stir at a low heat until the mixture becomes thick. The eggs should now be beaten in a separate bowl and then placed into the cream. Mix the cream thoroughly. Grate the nut meg and stir it into the cream.

Place all the ingredients together:
Now that your cream is ready cover the final layer of potatoes in the baking dish with the cream and spread evenly over the potatoes. Turn the oven on to 400 degrees Fahrenheit, and place the dish into the oven for 1 hour.

Serves 6-8.
